Next, in a saucepan, combine the apples, water and cinnamon (optional), and bring it to a boil. Cover the saucepan, reduce the heat and let it simmer while stirring occasionally for 20 minutes or until it is tender. You can also heat the applesauce in the microwave, uncovered, at high for 12 minutes, pausing to stir twice. Once your applesauce is heated, let it stand for 5 minutes.
